The fun part of being able to get fresh produce from a local veggie co-op is getting to try new vegetables I normally wouldn’t otherwise buy at the store. This last year I have found out about garlic scapes. I L.O.V.E. garlic everything and scapes are part of the garlic plant! Garlics are the bulbs and the scapes are the green stalks growing out of the bulbs. Garlic scapes even have the delicious flavor and scent of garlic itself!
Most people will make pesto with scapes but I wanted to try something different. I found this recipe and decided to give it a try. The biscuits were good, not super great but good. They were the proper density for biscuits and made me wish I had some sausage gravy. I would use more cheese next time as the sharp cheddar cheese was not very prominent in the biscuits.
They were good, and I would try making them again with some adjustments if I get more scapes. Grab some next time you see them, or grow your own!
